GARLIC & LEMON AIOLI

V, DF, GF

 

1 cup raw cashews, soaked for at least 2 hours, rinsed

3 tablespoons lemon juice

2 lemons, zest

1 tablespoon apple cider vinegar

½ teaspoon minced garlic

½ shallot, or 2 teaspoons fresh herb of choice like dill, basil

¼ teaspoon salt

½ cup water

4 tablespoons olive oil

1 teaspoon wholegrain organic mustard

 

Place all the ingredients in a blender except the oil and mustard, and blend until creamy and smooth. With the blender running on a low speed, pour in the oil slowly. Add the mustard and pulse until combined. Store in a glass jar in the refrigerator for at least a week.
