ACAI SMOOTHIE

Free radicals stress our body with 1,000’s of hits a day; they don’t take a holiday! At least once a week I give my body an antioxidant fix to help protect it from disease. And this smoothie does the trick as it’s packed with antioxidants from the berries, beetroot and superfood powders: acai and maqui. As an alternative, you can use 2 cups of frozen berries and omit the frozen banana. It is ok to omit the either acai or maqui powder.

 

Health benefits –

·       Maqui (mah’ key) berries have the highest known level of antioxidants, which help free the body of damaging free radicals that can actually cause premature ageing and disease. Its mild flavour is easily mixed with other foods.

·      Acai berries are rich in amino acids and fatty acids, and are full of antioxidants, minerals, and vitamins.

½ medium beetroot, peeled and sliced

¼ cup water or coconut water

1 cup frozen berries – blueberries, blackberries, strawberries, raspberries

1 frozen banana, sliced

1 tablespoon acai berry powder or 1 pack frozen acai berries

1 tablespoon maqui powder

½ lemon zest

¼ teaspoon minced ginger

1 teaspoon rice malt syrup, to taste (optional to mask the taste of beetroot)

 

Place water and sliced beetroot in a blender and blend at a high speed until liquid. Place other ingredients into a blender and pulse, alternately pushing down with the blender stick forcing the mixture onto the blades until smooth and creamy (don't over blend to avoid melting the mixture). Pour into a bowl and add toppings like: favourite fruits, rawnola or granola, homemade ice cream, @loving_earth chocolate, cacao nibs, coconut flakes for an extra energy boost. If you desire a smoothie drink, add more water or coconut water.
